Cinnamon Chip Scones

***Makes 8 Scones

2 Cups All Purpose Flour

2 1/2 Tsp. Baking Powder

1 Tsp. Cinnamon

1/2 Tsp. Salt

1/2 Cup Unsalted Butter, Frozen

1/2 Cup + 2 Tbsp. Heavy cream

1/2 Cup Packed Light or Dark Brown Sugar

1 Egg

Turbinado (Cane) Sugar

1 1/2 Tsp. Vanilla Extract

1 1/4 Cups Cinnamon Chips

-Line a baking sheet with parchment paper

-Whisk flour, baking powder, cinnamon, and salt in a ball and grate the butter in

-Use 2 forks to combine the dry ingredients with the butter until the mixture represents coarse crumbs

-In another bowl whisk the 1/2 cup cream, brown sugar, and vanilla

-Slowly add into the dry ingredients and add the cinnamon chips

-Mix everything together until clumps of dough appear

-Turn the dough onto a floured surface and knead the dough into a ball

(If the mixture is too dry add more cream - if it is too wet, add more flour)

-Press the dough into an 8" disc and cut into 8 even triangles

-Brush scones with the  2 Tbsp. of heavy cream and sprinkle some cane sugar on top

-Transfer the scones onto a baking sheet, spacing evenly, a couple inches apart, and set in the fridge for 15-20 minutes

-Bake the scones at 400ºF for 20-30 minutes or until golden brown

-Remove from oven and let cool

-Drizzle your scones with a lemon glaze and enjoy!
